Angela's Autumn Soup - great after a long day in the garden

     

Ingredients:

   

3 large carrots
1 red pepper
1 red onion
Drizzle of vegetable or olive oil
500 ml carton of passata (or large tin of tomatoes)
1 bay leaf
Pint & a half of water
Fresh coriander

The spices:
half a teaspoon of ginger, nutmeg, cumin, chilli flakes

 
  1. Peel and slice the carrots, chop the onion
  2. Deseed and slice the red pepper
  3. Drizzle a large pan with the oil and heat on the hob
  4. Next place the onion, carrots & red pepper into the pan and saute for about 5 minutes or until the vegetables soften
  5. Add all the spices to the pan and mix together well
  6. Next add the passata, stir well over a medium heat
  7. Add the water & the bay leaf and bring to the boil
  8. Cover and gently simmer on the hob for 30-35 minutes
  9. Next blitz the soup in a blender or food processor
  10. Ready to serve with some crusty bread and a sprinkle of coriander on the top.
